Simon Weaver:

For three generations the Weavers have been farming in the Cotswolds. Proudly following traditional methods of organic farming and caring for their land and animal welfare. Richard, who is the herdsman knows each of the 250 cows on a first name basis. He has over 42 years’ experience in the field! Happy cows makes for great tasting cheese.

The farm is perfectly situated for growing grass, and has never been intensively farmed. The higher ground is home to the nitrogen-rich clover meadows, ideal for grazing in the winter. Since 2005 Simon Weaver have been creating award-winning cheeses, using organic milk from their own cows, on their farm. All of their cheeses are produced by hand, ensuring a truly artisan product.
